Something Yummy to Make After Shopping At Fifi Wilson

For the cupcakes:

Source: Magnolia’s Vanilla Cupcakes from Food Network

Yield: 24 standard cupcakes

Ingredients

1 1/2 cups (190 grams/6.5 ounces) self-rising flour

1 1/4 cups (160 grams/5.5 ounces) all-purpose flour

1 cup (2 sticks/227 grams/8 ounces) unsalted butter, softened

2 cups (400 grams/14 ounces) white sugar

4 large eggs, at room temperature

1 cup (250 mL) milk

1 teaspoon (5 mL) pure vanilla extract

Method

1. Preheat oven to 350 degrees F. Line 2 standard muffin tins with cupcake liners of your choice (24 total).

2. In a small bowl, combine the flours and set aside.

3. In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth. Add the sugar gradually and beat until fluffy, about 3 minutes. Add the eggs, 1 at a time, beating well after each addition.

4. Add the dry ingredients in 3 parts, alternating with the milk and vanilla. With each addition, beat until the ingredients are incorporated but do not over beat. Using a rubber spatula, scrape down the batter in the bowl to make sure the ingredients are well blended.

5. Carefully spoon the batter into the cupcake liners ( to ensure consist cupcake sizes) and bake in middle of oven until tops turn golden brown and toothpick inserted into center comes out just clean (a few crumbs is okay), about 18 minutes.

6. Cool the cupcakes in tins for 15 minutes. Remove from the tins and cool completely on a wire rack before icing.

For the frosting:

Ingredients

3 sticks (340 grams/12 ounces) unsalted butter, softened and cut into cubes

5 cups (625 grams/22 ounces) confectioners’ sugar (icing, powdered)

2 tablespoons (30 mL) milk

2 teaspoons (10 mL) pure vanilla extract

pinch of salt

Method

1. In the bowl of an electric mixer fitted with the paddle attachment, whip butter for 5 minutes on medium speed  Butter will become very pale & creamy.

2. Add remaining ingredients and mix on low speed for 1 minute, then on medium speed for 5 minutes. Frosting will be very light, creamy, and fluffy.

3. Add touch of gel food colour, if desired and mix until blended.

4. Best used right away.

We have Loved Covent Garden and our sweet Fifi Wilson store in the heart of the fabulous Seven Dials area on Monmouth Street, but all good things must come to an end.  So after almost five wonderful years, we are saying Goodbye to our Covent Garden shop and Hello to new beginnings! :)

Candy Cakes Galore

Right next to the adorable Fifi Wilson store in Covent Garden’s Seven Dials, Monmouth Street sits the girlie, pink and uber cute Candy Cakes store for cupcakes, coffees and shakes!

The Legally Blonde Poster in the window and promotional cards for two tickets for just £50 really says it all: OMIGOD! This is my new favourite cafe in London! (My absolute obsession with Legally Blonde the musical is a whole different story, realy. Fact is: I love Elle and pink stuff and little dogs and cupcakes!)

The sweets and cupcakes scream Elle Woods, draped in pink shades and decorated with pretty flowers and hearts! Though the cafe is tiny, rosey and cute interior designs and low poofs and tables establish the perfect feel! Where ever you look, you’re blinded by lovely shades of green and pink  and purple and cupcakes that look like they could have been drawn for a Disney movie!

The Chanel, D&G, Dior and LV Cupcakes are the perfect treat for fashionistas on the go, and super sweet as a little pressie to bring along to a girls night in! (They simply CRY for a sleepover party!)

With offers that include buying four candy cakes and getting a cupcake or coffee for free, it’s no wonder I see literally every second person on the street sporting a fabulously pink and green Candy Cakes to-go bag!

Friday, I wake up late-ish and manage to sip at my boiling hot coffee before starting with my singing warm-ups for the day. If I’m feeling really awesome, I might sing through an aria or two before hitting Virgin Active gym and hitting those power plates! Then its off to a singing lesson and some really hard work. I love my life, I love my life, I love my life.

My Friday reward for making it through the week : a trip to the cutest, best and sweetest bakery in Chelsea! LoveBakery on the Kings Road has that magical way of making every week and every day better with just one (or two) delish cupcake!

It was the place I would hide out in, in my sweatpants and big hat when the answer to all of my problems seemed to be hidden inside of a strawberry cheesecake cupcake. The bakery I could always rely on to pick up some sweet sensations for a girls night, or a snack while strolling up the Kings Road on a shopping spree to Chelsea Green and Fifi Wilson.

Sam, the owner would often pop in to our Chelsea Fifi shop with a box of cakes to brighten up our afternoon.

With absolute horror, I found out that while I was enjoying my Christmas vacation away from London, the lovely LoveBakery shut it’s doors for the last time :(

We will miss LoveBakery at Fifi Wilson, my Fridays will never be the same again! We love you!

Twas the Night before Christmas Poem

Twas the night before Christmas, when all through the house
Not a creature was stirring, not even a mouse.
The stockings were hung by the chimney with care,
In hopes that St Nicholas soon would be there.

The children were nestled all snug in their beds,
While visions of sugar-plums danced in their heads.
And mamma in her ‘kerchief, and I in my cap,
Had just settled our brains for a long winter’s nap.

When out on the lawn there arose such a clatter,
I sprang from the bed to see what was the matter.
Away to the window I flew like a flash,
Tore open the shutters and threw up the sash.

The moon on the breast of the new-fallen snow
Gave the lustre of mid-day to objects below.
When, what to my wondering eyes should appear,
But a miniature sleigh, and eight tinny reindeer.

With a little old driver, so lively and quick,
I knew in a moment it must be St Nick.
More rapid than eagles his coursers they came,
And he whistled, and shouted, and called them by name!

“Now Dasher! now, Dancer! now, Prancer and Vixen!
On, Comet! On, Cupid! on, on Donner and Blitzen!
To the top of the porch! to the top of the wall!
Now dash away! Dash away! Dash away all!”

As dry leaves that before the wild hurricane fly,
When they meet with an obstacle, mount to the sky.
So up to the house-top the coursers they flew,
With the sleigh full of Toys, and St Nicholas too.

And then, in a twinkling, I heard on the roof
The prancing and pawing of each little hoof.
As I drew in my head, and was turning around,
Down the chimney St Nicholas came with a bound.

He was dressed all in fur, from his head to his foot,
And his clothes were all tarnished with ashes and soot.
A bundle of Toys he had flung on his back,
And he looked like a peddler, just opening his pack.

His eyes-how they twinkled! his dimples how merry!
His cheeks were like roses, his nose like a cherry!
His droll little mouth was drawn up like a bow,
And the beard of his chin was as white as the snow.

The stump of a pipe he held tight in his teeth,
And the smoke it encircled his head like a wreath.
He had a broad face and a little round belly,
That shook when he laughed, like a bowlful of jelly!

He was chubby and plump, a right jolly old elf,
And I laughed when I saw him, in spite of myself!
A wink of his eye and a twist of his head,
Soon gave me to know I had nothing to dread.

He spoke not a word, but went straight to his work,
And filled all the stockings, then turned with a jerk.
And laying his finger aside of his nose,
And giving a nod, up the chimney he rose!

He sprang to his sleigh, to his team gave a whistle,
And away they all flew like the down of a thistle.
But I heard him exclaim, ‘ere he drove out of sight,
“Happy Christmas to all, and to all a good-night!”
